Generations: Four. Started by Pierrette and Joe Baldwin with the help of Pierrette's French parents; now run by the Baldwin's daughter and son-in-law, Pia and Lincoln Field. The Fields' children help out at the family business.
Locations: 979 Route 9 in Wilton since 1963. A second restaurant was opened in Schenectady in 1984, but closed a few years later.
